Explore the west coast of Tenerife, a gorgeous landscape of remote villages and banana plantations. Have privilege views over the fertile Orotava valley from the Humbold viewpoint. Over time, sugarcane, grapes and bananas became the dominant crops, and they are still harvested using traditional techniques. To completely understand how the crops are cultivated and packaged for export, you will tour a private banana plantation. The workers will describe the process before serving you a sampling of locally grown bananas and banana liqueur. On the way back to pier, stop at La Garañona Viewpoint, local´s favorite spot to take in the beauty of the sea and surrounding.

Your host will be a farmer that tends payoya goats and Grazalemeña sheep, whose milk is used to produce the cheeses. The most well-known and award-winning cheese is El Bosqueño, a smooth textured, light-colored cheese. The farmer will lead you through the fields where the goats and sheep graze and walk you through the cheese-making process step by step. You will also browse a cheese museum with displays of cheese-making hand tools and exhibits detailing the history of cheese production in the area. Afterwards, you will enjoy a sampling that may include an emborrado cheese cured in olive oil and wheat bran. Other cheeses produced here are cured with fresh spices such as rosemary and paprika. Become familiar with the workings of a dairy farm that runs on solar energy and follows practices that reduce stress on the animals. The farm is adjacent to the Sant’Alberto Solar Park, one of the largest photovoltaic plants in Italy, which supplies the renewable energy in a manner that doesn’t disturb the grazing sheep. The name Buon Pastore, which translates to “good shepherd,” is fitting as the dairy is passionate about treating the animals and pastures with great respect. The automatic system that milks the sheep is designed to be as gentle and agreeable as possible. The extracted milk is then made into a variety of cheeses, a process that you will watch through a large glass wall. The farm also keeps bees, which produce the honey for the tasting that follows the tour. You will also be offered Buon Pastore cheeses that have been aged in a stone-lined cave, fresh-baked flatbread, and local wines.

Explore a wetland nature reserve on reclaimed land that now supports an abundance of indigenous flora and fauna. Salt pans covered much of this area for centuries, and it wasn’t until about 50 years ago that the brackish wetlands became an important habitat for flora and fauna. As you walk through this wonderfully unique ecosystem, a naturalist will describe the transformation of the reserve and how environmentalists prevented it from becoming an industrial zone. Nearly 250 types of birds—more than half the species in the entire country of Slovenia—have been spotted there, including Eurasian reed warblers, black-winged stilts and squacco herons. You can also expect to see a huge variety of colorful butterflies flitting about. Halophytes are among the more intriguing plants found in the wetlands, as they thrive in salty ground. From a distance, these succulents appear to have ice on their leaves, but it is actually dried salt that the plants exude from their glands.
