OVERVIEW

Travel by cable car to the summit of The Rock for a tour focused on the turbulent history of the fortress that is Gibraltar. Driving on, you’ll visit ""A City Under Siege"" – an enlightening historical exhibition housed in the earliest British buildings on Gibraltar. Having learned much of The Rock’s story, you can now either explore further independently in Old Town or transfer back to the ship.

Nearly 250 types of birds—more than half the species in the entire country of Slovenia—have been spotted there, including Eurasian reed warblers, black-winged stilts and squacco herons. You can also expect to see a huge variety of colorful butterflies flitting about. Halophytes are among the more intriguing plants found in the wetlands, as they thrive in salty ground. From a distance, these succulents appear to have ice on their leaves, but it is actually dried salt that the plants exude from their glands.

Learn to make traditional paella at a farm in nearby L’Horta, an agricultural region on the outskirts of Valencia where most of the ingredients grow or can be found. Valencians often spend weekends in L’Horta to relax and enjoy a dinner of paella. The gathering is a ritual of sorts, in which families come together to socialize and dine on a dish that was first prepared in this area in the 15th or 16th century. The owner of the farm will show you around the grounds and point out some of the many garden items that will end up in your paella. You will then join a hands-on workshop and learn the basics of preparing this once-humble dish from scratch. While the dish is simmering in a large circular pan, you will toast the upcoming meal with a glass of sangria. When the paella is finished, you might taste it straight from the pan, another Valencian tradition.
