Settle in for a spectacularly scenic drive that includes the north and south coasts of Roatan before enjoying free time at the beach. From the top of the appropriately named Panorama Hill, you will be treated to a magnificent view of Coxen Hole and your cruise ship. You will then follow a route through the interior of the island to the Eco Caribbean Culture Park, where you might meander the natural paths that wind through the gardens and delve into the history of the Paya Indians, the island’s original inhabitants. You may also learn about Captain Henry Morgan, the Welsh-born pirate that supposedly hid out Roatan in the late 1600s. For an understanding of the present-day culture, you will likely see a demonstration of how coconuts and cashews are processed. For the nature enthusiast, this is an exclusive opportunity to view Falkland Islands wildlife and flora, including native Falkland birds, approximately 20-30 different species. Drive to picturesque Whalebone Cove, where your walk starts. Walk around the coastline to Hadassa Bay, where you might find dark-faced ground-tyrants, Falkland thrush, upland geese and the beautiful long-tailed meadowlark, just to name a few. Savor a selection of Provence wines paired with locally produced cheeses in Aix-en-Provence, a medieval town that begs to be explored. You will begin with a walk along the leafy Cours Mirabeau, a wide boulevard framed by cafés, bookshops and elegant mansions with wrought-iron balconies. The beloved plane trees that shade the boulevard are about 200 years old. You will likely see landmarks such as the Mousse Fountain, which is fed by a natural thermal spring where the Romans bathed. In time, you will stop at La Fromagerie du Passage, a shop that sells extraordinary cheeses and wines. During the tasting that follows, you will sample a selection of wines paired with a charcuterie of local meats and cheeses produced through traditional methods. Chances are, one of the wines will be a rosé, which is by far the dominant wine produced in Provence.

A scenic ride through the charming Flemish countryside takes you to Ghent, a delightful town that is proud of its medieval heritage.

Your walking tour starts at the center of the medieval city of Ghent, at St. Michaels Bridge, with its view of Ghent’s three glorious medieval steeples. Your guide will lead you to the pontoon where you’ll board a canal boat for a fun and thorough exploration of the city. As you cruise through the historic city, see highlights such as the impressive castle of the counts, the Fish Market, 13th century monasteries and the ancient port of Ghent along with its mercantile houses.

Once your canal cruise ends, you’ll have free time to independently explore this gracious city. You may choose to enjoy a locally brewed beer in one of the stylish bars, or maybe a coffee in one of the waffle houses. Strolling along the narrow streets, many of which are pedestrian, you’ll be enthralled by the unique architecture, while the shops will tempt you with their fine chocolates, Flemish lace and other locally-crafted wares.

While meandering about, you may notice an odd curve to some streets. The reason is that the buildings lining them follow the footprint of the massive walls that once supported a Roman amphitheater.
