A ferry will take you to the Waterland, where you will begin pedaling at a leisurely pace well suited to the area’s laid-back ambiance. You can expect to see farmers going about their daily lives, brightly painted wooden houses and an impossibly green countryside crisscrossed with canals and dotted with seemingly endless rivers and lakes. Almost half of the Waterland is water, held in check by a series of dikes, and the landscape couldn’t be more beautiful. Expect to pass cows grazing in fields, iconic windmills pumping water out of the lowlands and a number of seaside villages, one of which you will stop in for a drink. The Waterland is also a paradise for water birds, and you will likely see countless swans and geese and perhaps even a godwit, the national bird of the Netherlands.

Enjoy an insider’s look at life in Edam by visiting a local family and touring a cheese-making facility to see how Edam’s famed cheese is produced. An enlightening walking tour will introduce you to the city. Here, you will see from the outside, St. Nicholas Church and the Edam Museum; which occupies an 18th-century sea captain’s house. For a deeper understanding of life in Edam, you will stop by a centuries-old residence and enjoy coffee and cake with the owners. They will elaborate on the long history of their home, how Edam has changed just in their lifetimes and what the future may hold. Still, it is impossible to escape the draw of cheese in Edam. More than a quarter of the cheese produced in the Netherlands is the city’s namesake cheese, a soft variety made with less milk fat than most other cheeses. While touring a cheese-making facility, you will watch the process and then taste samples.

Mingle with the locals while sampling traditional German specialties at a family farm and while enjoying more treats at a bakery in the city. The Quast family has owned the farm since 1720, and they continue to grow fruits such as apples, plums and pears. You will gain an understanding of how the fruit is harvested and the challenges of running a small private farm in modern times. Feel free to ask questions while enjoying homemade fruit schnapps and cake in the farm’s café. On the return to Hamburg, you will walk among the locals in the pedestrian tunnel that was built under the Elbe River in 1911. Be sure to notice the decorative tiles depicting sea life. You will also mingle with the residents and get an authentic look at daily life in Hamburg by riding public transportation to the Effenberger Bakery. The owner will then regale you with stories of running the bakery and offer fresh-baked goods.

Enjoy an introduction to Gijon’s historical landmarks and stop for photos at its most scenic lookout and extraordinary university complex. Arrive at Mirador de la Providencia, a hilltop lookout that juts towards the sea. From here, enjoy a bird’s-eye view of Gijon and the Cantabrian coastline. This elevated perspective provides an excellent introduction to the landmarks that lie ahead.

Once an ancient Roman port, Gijon still boasts several reminders of the past. The neighborhood of Cimadevilla is of historical importance as it is in the oldest part of the city, on a peninsula that protrudes into the bay. Its cobblestone streets are narrow and labyrinthine, the houses tall and colorful, and many residents still earn their living by fishing. Several downtown churches also offer a glimpse into Gijon’s past, including the 18th-century Collegiate Church. Its neoclassical architecture is not only visually beautiful, but also lends wonderful acoustics to some of the spaces inside, which are used for concerts. Standing next to the bay and beach, it offers a perfect photo opportunity.

Just outside of town is the sprawling Universidad Laboral, where you’ll pause for photos in the main square. Originally designed as an orphanage for miners’ children, the complex of buildings later became a technical school and then expanded to include a theater, music conservatory and church.

OVERVIEW

Venture into the Provençal countryside with a truffle hunter and a truffle-hunting dog for a demonstration of how to find these coveted fungi, after which you will sample them with several local wines. Your adventure will take place near Rognes, a village known its wine, quarried stone and the cultivation of black truffles. These delectable fungi delicacies, sometimes called Provençal black diamonds, grow underground near the roots of specific host trees. Their locations are closely guarded, as the truffles are highly prized for their pleasant aroma and earthy flavor. Accompanied by a truffle hunter and a specially trained truffle-hunting dog, you will head into the vines in search of black truffles. Once the dog sniffs out a truffle, the hunter will show you how to extract it from the soil without damage. It is a slow, methodical process that reflects the value of these black fungi. After truffle-hunting, you will enjoy a tasting of truffles paired with local wines.

Enjoy a brief look at the fabled city of Granada and visit two notable landmarks, Capilla Real and the Cathedral of Granada.

It's a 45-minute drive inland to the Moorish city of Granada, nestled at the base of the Sierra Nevada Mountains. As you travel down a modern highway that was once ancient Arab pathways, you will enjoy wonderful views of both the Alpujarras Mountains and the Sierra Nevada, as well as groves of olive and fruit trees. Upon arrival, your first stop will be in the Albaicin quarter. This is the old Arab quarter and was the residential region of the Moors, even after the city was reclaimed by Spain. This narrow labyrinth of crooked streets escaped the fate of much of Granada, which was torn down in the name of progress. Fortunately it has been preserved, as have its cisterns, fountains, plazas, whitewashed houses, villas, and the decaying remnants of the old city gate. From a viewpoint here, you'll be able to capture photos of the renowned Alhambra Palace.

Continuing on, you will drive to Capilla Real and the Cathedral of Granada which is located next door. The close relationship between both gives rise to a curious formal detail seen in the ambulatory that surrounds the circular gallery. The Capilla Real's gothic gateway becomes just another part of the Cathedral's walls, as if it were in reality one of the other many chapels when, in fact it represents the entrance to another building. In the Royal Chapel here, the remains of Queen Isabella and her husband Ferdinand are kept. It was their wish to be buried in recaptured Granada, not Castile or Aragón. The coffins are remarkably tiny-a reminder of how short they must have been. In the sacristy you can view Isabella's personal art collection, including works by Rogier Van der Weyden and various Spanish and Italian masters, such as Botticelli.

Next, you will make the short walk to the richly ornate Renaissance Cathedral. With its spectacular altar, it is considered one of Spain's architectural highlights and is renowned for its beautiful facade and gold-and-white interior. Construction of the Cathedral began in 1521 in a gothic style, and came to completion in 1714 as an example of Baroque architecture. Another outstanding feature is the facade by Alonso Cano, a truly marvelous example of Baroque interiors, culminating in the bell tower which holds more than a secret within. The ground plan incorporated a five-nave basilica and another in the center to be surrounded by an enormous aisle, in which a high altar would be inserted. This design led Rosenthal to believe that the model was based on the Holy Sepulcher in Jerusalem.

Following your Cathedral visit, you'll walk back to your awaiting coach and make the drive back to the pier in Motril where your tour concludes.

Spend hours relaxing however you please at the Beach Escape Beach Club in nearby Mahahual. After a brief orientation to help you maximize the experience, you will be free to enjoy the club’s amenities, which are considerable and all offered for your enjoyment. You might stretch out on a lounge chair and bask in the sun, take a refreshing swim in the sea and gather around the thatched-roof poolside bar, which will be open for unlimited drinks the entire time. After a short walk from the pier, you will hop into a Jeep Wrangler and hit the open road. There is plenty to see during your time behind the wheel, starting with downtown Nassau, the capital, largest city and cultural hub of the Bahamas..

You will drive through the colorful shopping district on Bay Street and see highlights such as palm-dotted Rawson Square, lovely government buildings such as the Supreme Court and the pink-hued House of Assembly. You will then head west past lovely Cable Beach and on towards the Nassau Caves for a photo stop..

The Lucayans, the original residents of the Bahamas once lived in these caverns. Settlers later used the caves for religious services and the guano inside to fertilize their crops..

You will drive along JFK Drive, which recognizes President John F. Kennedy’s 1962 meeting in Nassau to discuss Polaris, the United Kingdom’s submarine-based nuclear-weapons program. The fabulous and sprawling Baha Mar resort is another Bahamian landmark that you will pass. .

Free time on one of Nassau’s most inviting beaches follows, during which you might stroll along the shore, bask in the sun or simply admire the natural beauty and serenity of the sea. Then after a bountiful lunch at the Bahamian Grill, you will return to the pier..
