Enjoy an insider’s look into the art of cheese-making at Queseria del Valle de Tibi, a small dairy farm where a married couple tend and milk the goats and produce the various cheeses. The goats are bred and raised on the premises to ensure the purity of the products. The husband is primarily the shepherd, while his wife oversees the making of the cheeses. While touring the farm, you may walk through the grazing fields and see the goats being milked. The goats’ milk is then ripened with cultures, natural enzymes are added to form the curd and the whey is drained off. The resulting products vary depending on the process and aging. Certain curds are used to prepare pastries, cream cheeses are flavored with fresh herbs such as rosemary and thyme, and some cheeses are aged longer for more pungent tastes. It is a fascinating process, and you will gain a deeper understanding of it by sampling the cheeses.

Need to Know:

This tour includes approximately 1 1/2 hours of walking/standing; there will be some inclines and cobblestone surfaces to negotiate. The tour is available to wheelchair guests who have a collapsible wheelchair, who are able to make their own way on and off the vehicle and have an able-bodied companion to assist them. This tour has a limited capacity; therefore, it is recommended that guests pre-book this tour as early as possible.
