    Kona Joe's Roasting Experience

    Kona, Hawaii

    Duration 3 hrs

Learn to roast your own coffee hands-on at Kona Joe, the first trellised coffee farm in the world. As an introduction to the world of coffee beans, you will first tour the 20-acre property and discover the benefits of innovatively growing coffee on trellises, much like wine grapes are grown. In essence, trellises allow for more uniform sunlight exposure, which results in more even ripening of the coffee cherry – the fruit that holds the beans inside. You will learn how Kona Joe roasts its coffee and then try your hand at roasting 10 ounces of premium beans. Just tell the guide how you like your coffee – whether lightly roasted, medium or dark for a bold flavor – and follow the guide’s instruction regarding how to control the roaster’s temperature, drum speed and air flow. You will come away with your own bag of coffee and enjoy a cup of freshly brewed coffee compliments of Kona Joe.

    Local Halibut Fishing

    Ketchikan (Ward Cove), Alaska

    Duration 5 hrs

    OVERVIEW

Try your luck fishing for halibut, a species of flatfish that gets massive and feeds voraciously in the summer. You will head out to the fishing grounds in a group of no more than six guests, which ensures that the captain and crew can provide exceptional personal attention to increase your chances of catching one of these behemoths. Once the boat anchors, you will fish with a vertical rigging to reach the bottom of the ocean floor where halibut live. The larger fish are usually females and can grow up to eight feet in length and five feet in width, which is why they are often called “barn doors.” Imagine what a thrill it would be to reel in one of these lunkers. If you catch one, you will notice that it has smooth scales and a light-colored bottom and a darker top, which acts as a natural camouflage that mimics the hues of the ocean floor and water.

    HIGHLIGHTS

    • Fish for halibut on a private boat with just five other guest’s maximum.
    • Follow the crew’s advice and tips to increase your chance of catching a huge halibut.

    Mendenhall Lake Kayak-Salmon Bake Combo

    Juneau, Alaska

    Duration 5 hrs

Cruise into beautiful Auke Bay looking for humpback whales feeding and breaching the water’s surface, and then enjoy a traditional Alaskan salmon bake. After departing from the pier, you will enjoy a brief but picturesque drive to Auke Bay, a pristine waterway named after one of the Alaskan native first people. Upon arriving, you will board a jet-powered catamaran specifically designed for sightseeing and cruising Alaskan waters. Before long, you will be out in a prime area for whale watching. Humpback whales are often spotted here, even close to shore, and the sight is breathtaking. You may see these majestic creatures breaching the water’s surface, waving their flukes up and down as they dive, and feeding voraciously to fatten up for their winter migration south. You might even spot them bubble-net feeding, a unique technique in which several whales swim in an ever-shrinking circle while blowing bubbles below a school of fish. The bubbles force the fish upwards and cluster them into a column, presenting the perfect opportunity for the whales to gorge themselves. It’s a mesmerizing sight you will not soon forget. Following the whale-watching adventure, you will dine at the Gold Creek Salmon Bake. The salmon will be grilled over a fragrant alder wood fire, imparting the fish with a unique taste. The all-you-can-eat meal includes other signature Alaskan side dishes and desserts, so bring a hearty appetite. Black Bear & Wildlife Exploration

    Ketchikan (Ward Cove), Alaska

    Duration 3 1/2 hrs

Join this bear-viewing opportunity, which is accessible by road. You'll begin with a narrated eight-mile coastal drive to the forested area of Herring Cove located within the Alaska Rain Forest Sanctuary. Meet your guide and set out on a walking expedition to locate some of the black bears that call this area home. You will pass through tall stands of hemlock, spruce and cedar as you explore the sanctuary. The nearby Whitman Hatchery ensures that the river is teeming with salmon every summer. Typically, large numbers of black bears gather here to feed on these huge runs of salmon that are returning to spawn in the stream. Bald eagles perch in the trees, waiting patiently for scraps left by the bears. Mink and marten often frequent the area, and seals often hang out near the mouth of the stream feeding on the bountiful fish runs. You will have ample time to observe the wildlife activity. Walk through the historic Herring Bay Lumber Company sawmill established by legendary pioneer Ben Fleenor. Transportation to and from the sanctuary is by motorcoach.

Wildlife Cruise, Oyster Farm & Tasting

    Ketchikan (Ward Cove), Alaska

    Duration 3 hrs

Discover how Alaska’s cold, nutrient-rich waters are ideal for growing oysters and kelp by touring a floating farm and then sampling both sustainable products. The tour offers a unique and very exclusive experience with local guides and a maximum of 14 guests. After departing from the pier, you will enjoy a picturesque coastal drive along the Tongass Narrows to Bonfire Bay. From here, you will cruise to Clover Pass, all the while watching for humpback whales, seals and sea lions, which frequent these pristine waters. Be sure to look overhead too, as eagles are also abundant. Upon arriving at Hump Island Oyster Company’s floating oyster farm, you will tour the family-owned floating facility. The deep, nutrient-rich tidal waters of Clover Pass are ideal for farming oysters in trays suspended from cedar floats. The oysters are nurtured as they grow from thumbnail size to market size, and as you will discover it’s a fascinating process. The company was also the first in Alaska to grow kelp at a tour site, another sustainable endeavor only possible because of the bay’s extraordinary water conditions. To delve even deeper into the challenges of aquaculture, your guide will explain the threats to the industry along with the sustainable operation. Next, your inner-child will be delighted with our on-site touch tank featuring critters from the local waters. Make sure to bring your camera as the views are amazing offering great photo opportunities. Still, there is no better way to understand how conditions affect oysters and kelp than to taste the final products in a true farm to table experience. A sampling will reveal that the plump oysters have a unique briny flavor that finishes with a hint of melon. The kelp harvested in Southeast Alaska is used liberally in products such as salsa and seasonings.
