See Florence's highlights at your own pace by riding a double-decker bus around town, hopping on and off whenever you please at the attractions you find most intriguing. After departing from the pier, you will settle in for a leisurely and immensely scenic drive through the Tuscan countryside and on to Florence. In time, you will stop in historical St. Croce Square, a wonderfully atmospheric gathering place where you can easily walk to landmarks such as Santa Croce Basilica. Built in the late 13th century, the church contains the tombs of Michelangelo and Galileo, so it will be well worth visiting. You might also want to stroll over to the iconic Ponte Vecchio bridge that spans the Arno River and then linger over a Tuscan lunch before beginning the Hop-On Hop-Off bus tour. Then, using the complimentary bus pass, you can explore the sites in Florence that are most appealing to you. More than 12 designated stops are available on the bus route. Simply hop on one of the buses and then hop off when it reaches an attraction that interests you. For instance, you might hop off near Michelangelo's exquisite statue of David in the Accademia Gallery, and see masterpieces from artists such as Leonardo da Vinci and Caravaggio in the Uffizi Gallery. One of the most popular and certainly photogenic Tuscan towns, San Gimignano is known for its soaring tower houses. Although only 14 of the original 72 towers remain, they are so spectacular that UNESCO declared the town’s historic center a World Heritage site. No matter where you meander, hillside San Gimignano will exude a feudal atmosphere, much like it did at the height of its power and status. Nearby, you will pause at a winery, perhaps Fattoria di Montecchio, to sample a selection of Tuscan wines. As Chianti is one of the region’s most favored wines, it will likely be included in the tasting. Produced mainly with Sangiovese grapes, the winery’s Chianti Classico pairs beautifully with the finocchiona salami and pecorino cheese that will also be served.

Spend an enlightening day at a farm in Tuscany that produces a multitude of organic foods, many of which will be used as ingredients in your lunch. As an introduction to the artisanal practices at the Diacceroni farm, you will see how honey is produced and sample several varieties of the natural sweetener, which may include an amber chestnut honey and a floral-flavored acacia honey. Similarly, you will discover how the farmers use traditional methods to grow and harvest the crops. In preparation for the afternoon cooking class, you will gather a selection of fresh vegetables and herbs from the farm’s fields and gardens. You will then use those ingredients to concoct your delicious four-course lunch under the chef’s watchful eye. The dishes will be thoughtfully paired with organic wines. Afterwards, you’ll spend some time with a wine expert and agronomist who will talk with you about environmental ethics and biodiversity.

Drive into the Apuan Alps to behold the quarries where Carrara marble has been excavated for centuries and then enjoy a sampling of a local Tuscan delicacy.

After departing from the pier, you will drive toward the Apuan Alps, a mountain range where high-quality marble has been quarried for centuries. What appears to be snow from a distance is actually white marble and marble dust on the mountains’ bare quarried faces.

As you approach the quarries, you will switch vehicles and continue on in a Jeep that is ideally suited for the rugged terrain. During the drive through the quarries, your escort will elaborate on the excavation process and how it has changed over the centuries.

In Roman times, Carrara marble was extracted by hand and shipped throughout Italy to build palaces and monuments. During the Renaissance, Michelangelo came to these quarries to find marble for masterpieces such as the Pietà and David. The artist favored the whitest, most finely veined marble from the Serra gorge. Today, beefy bulldozers and diamond-edged cutting equipment are used to excavate the marble.

But marble isn’t the only product synonymous with this area, as you will discover at a lard sampling. While it may not sound appetizing, the local Colonnata lard, which is pork back fat, is considered a delicacy. The preparation involves cutting the lard into strips, adding proprietary seasonings, and then aging it in a marble container for at least six months. The resulting treat will melt in your mouth. Following some free time, you will travel back to the pier.

Gain an understanding and appreciation of the far-reaching influence of Andrea Bocelli’s family, beginning with a concert by excellent artists that surrounds the Bocelli’s world. The performance will be held in Villa Bertelli, a stately 19th-century residence in the seaside Tuscan town of Forte Dei Marmi. Guests will join a beautiful concert performed by a professional pianist and a lyric/pop singer. At the nearby Alpemare Beach Club, which the Bocellis completely renovated, you will be treated to a tasting of wines from the Bocelli vineyards. Your culinary immersion will begin at the Central Market, one of the oldest markets in Europe. With more than 200 shops and stalls, the late 19th-century Art Nouveau-style market attracts those seeking extraordinarily fresh produce, cheeses and meats. Virtually every iconic Italian food, condiment and beverage is on display. While meandering from stall to stall, you can expect the aroma of freshly ground coffee, baked goods and exotic spices to be wafting through the air. Samples may be offered to whet your appetite for the chickpea pancake tasting that follows. This popular street food is a thin flatbread that is typically crispy on the outside, soft on the inside and spectacularly flavorful. As a complement, you will visit the New Venice district for a cup of Ponce Livornese, a restorative rum-and-coffee concoction that locals often order as digestives following dinner.

The narrow streets are wonderfully atmospheric with fine shops characteristic of the Italian Riviera. In time, you will board a private boat for an enlightening cruise around the bay, which is also known as Poet’s Gulf in reference to Lerici once being a celebrated enclave for poets and writers. Spend hours relaxing, dining and enjoying a wine tasting at a Tuscan estate that the Bonaparte family once owned in San Miniato. A wonderfully panoramic drive through the idyllic countryside will bring you to Cosimo Maria Masini, a winery that follows biodynamic agricultural principles that increase the soil’s fertility, resulting in high-quality, naturally healthy crops. While touring the vineyards and wine cellar, you will gain an understanding of biodynamics and how it applies to viticulture. Biodynamically grown grapes tend to be much more expressive than grapes grown through other means. You will taste the difference while lingering over a lunch that may include, bruschetta, cheeses and cantuccini almond biscuits. Up to three complementary wines from the estate will also be served. A red varietal made entirely from Sangiovese grapes and a white blend with herbal notes are possible choices. Afterwards, you may explore the estate on your own.

Drive through the lovely Tuscan countryside en route to the historic town of Pisa, located on the banks of the Arno River. Enjoy a short trolley ride that takes you directly to Miracle Square, next to the famous Leaning Tower. During World War II, much of Pisa was destroyed by German and Allied bombing, however the cathedral, baptistery and famous leaning tower escaped unharmed. Arriving at the Field of Miracles, join your guide for a climb up the 294 steps and discover the world famous Leaning Tower. Built to display the wealth of Pisa, the bell tower began leaning during construction due to the foundation settling unevenly as builders reached the fourth story. The builders compensated for the angle but the tower continued its tilt. Today, the tower leans 14 degrees from perpendicular. Continue down to the open air square for a brief explanation of the Cathedral and the Baptistery. You’ll have some free time to browse for souvenirs and gifts at the many stalls lining the walk to the Field of Miracles.

Enjoy a relaxing 45 minutes scenic ride through the lush Tuscan countryside until you’ll arrive at the estate of one of the area’s renowned wine. Once there, you’ll tour the winery and learn how these delicious wines are produced and are aged to perfection. Admire the estate’s vineyards, where the Sangiovese grapes are grown. These are the principal grapes used in the production of Chianti. You’ll get to see the vineyards cultivation of red and white wines along with the olive trees that produce some of the area’s finest oil. Taste a variety of the house wines accompanied by bread, olive oil, cheese and salami. You’ll be able to purchase your favorites to take back with you before returning to your ship.

Spend free time exploring Vernazza and Riomaggiore, two spectacularly beautiful coastal villages in Cinque Terre, an area so scenic that UNESCO named it a World Heritage site.

After departing from the pier, you will settle in for an immensely picturesque drive to Vernazza, one of five coastal villages within Cinque Terre. All of them lie within the ruggedly beautiful Cinque Terre National Park, an area that UNESCO has deemed a World Heritage site for being a landscape of great scenic and cultural value.

Arguably the most photogenic of the villages, Vernazza is a wonderful setting to enjoy free time, meandering about wherever you please. The main square is a great place to start exploring, as the Church of Santa Margherita d'Antiochia stands here overlooking the natural harbor. Built in the Gothic-Ligurian style, the church features an octagonal bell tower that can't be missed, making it even easier to find your way around the pastel-colored town.

After a few hours strolling the narrow lanes of Vernazza, you will drive on to Riomaggiore, another absolutely gorgeous coastal village that clings to a steep hillside. The largest of the five villages, Riomaggiore has also been built into a steep rocky hillside, affording magnificent views of the sea.

Because of its size, Riomaggiore offers a few more points of interest than Vernazza. A 13th century castle looms over the historical center, the Oratory of St. Mary Assumption holds an intriguing 15th-century triptych and the St. John the Baptist church is ornamented with black-and-white marble.

Enjoy free time to explore the medieval town of San Gimignano and then visit a nearby farm for a traditional lunch and a selection of locally produced wines.

After departing from the pier, you will settle in for a picturesque drive through the charming Tuscan countryside towards the medieval walled town of San Gimignano. The architecture, particularly the 14 soaring tower-houses, has earned the town a UNESCO World Heritage Site designation. The exact purpose of the towers is disputed. Some believe that they were built as fortifications; others insist that the towers were merely meant to be signs of wealth.

Upon arrival, you have approximately two hours of free to experience the city at your leisure. You might start in the Piazza della Cisterna, which features the square’s namesake well, or the 13th-century Piazza Duomo, a square dotted with monuments and flanked by mansions. Regardless of where you choose to explore, hillside San Gimignano will exude a medieval atmosphere, much like it did at the height of its power and status.

Rejoining your coach, you will drive to nearby San Donato, a farm and winery characteristic of Tuscany. While enjoying a buffet lunch and wine tasting, you will discover that many of the ingredients are produced at San Donato, particularly the olive oil, saffron and four varieties of grapes.

The wines will be chosen upon your arrival, but it is likely that Chianti Classico, made entirely with sangiovese grapes, will be amongst the selections. Afterwards, you will transfer back to the pier in Livorno.
