Savor authentic Hawaiian dishes and beverages at several establishments in the historical district of Wailuku, which nestles at the foot of the West Maui Mountains.

After departing from the pier, you will soon arrive in the heart of historical Wailuku, where you will stop in a variety of unpretentious restaurants and locales to sample pure Hawaiian specialties. Some of the dishes will reflect the town’s Asian and Pacific Islander ethnicities.

While the exact offerings will vary, you can expect to taste breakfast staples such as banana pancakes and hot malasadas, a fried-dough treat that Portuguese sugarcane workers introduced to Hawaii in the late 19th century.

Loco moco is another classic, and the Tasty Crust has been serving it for more than 40 years in Wailuku. The dish is a savory combination of rice, hamburger patty and brown gravy, topped with a fried egg or two.

In all likelihood, you will also sample delectable sashimi, a variety of poke bowls and seasoned saimin noodles. Another favorite is Spam musubi, a handheld with a slice of Spam wedged between two blocks of rice and wrapped in nori, a Japanese seaweed.

You will also sample several beers at the Maui Brewing Company, Hawaii’s largest craft brewery. Selections range from a citrus-flavored India Pale Ale known as Big Swell to Coconut Hiwa Porter, a robust dark ale with hints of mocha.

Discover how Hawaii’s best-selling vodka is made, enjoy a serene stroll through a botanical garden and see how locally grown lavender is infused into all sorts of products.

After departing from the pier, you will enjoy a leisurely, scenic drive to the Ocean Vodka Organic Farm Distillery. While touring the family-owned estate, you will discover the sustainable farming practices that produce Hawaii’s best-selling vodka.

The distillery is entirely solar-powered and the ingredients such as sugar cane are organically grown in volcanic soil without herbicides or pesticides. The vodka is the only one in the world made with deep ocean mineral water, which imparts a unique flavor to it. A tasting of gluten-free Ocean Vodka follows the tour, after which you will receive a shot glass souvenir.

You will next visit Kula Botanical Garden, which blankets the slopes of the massive shield volcano Haleakala. As you meander the garden paths, you may pass koi ponds, walk through a covered bridge and enjoy the soothing sounds of waterfalls. Hawaiian geese known as nenes freely roam the property. Few places are quite so peaceful and naturally beautiful.

Continuing on, you will stop at Ali’i Kula, a farm that grows lavender for a variety of products. While exploring the farm on your own, you can take in the sweeping views of Maui’s central valley and see how the lavender is grown and used in products such as soaps, essential oils, jelly and candles.

Explore a lush reef with colorful coral combinations found nowhere else in these islands and home to more than 250 species of fish.

Snorkel in the crystal-clear waters off Maui’s south shore, where you will find coral reefs teeming with tropical fish and an area just off the beach known for its many sea turtles.

After departing from the pier, you will enjoy a scenic ride across the neck of Maui to lovely Maalaea Bay on the island’s southern shore. Here, you’ll board a Zodiac vessel that is ideal for navigating into areas such as Molokini Crater, a snorkeling paradise.

Geologists believe that the crater was formed following a volcanic eruption about 230,000 years ago and soon filled with seawater. The crescent-shaped crater and surrounding 77 acres have since been deemed a protected Marine Life Conservation District and Bird Sanctuary, and wildlife is abundant below and above the water’s surface.

While snorkeling along the crater’s coral reefs, you can expect to see brightly colored Picasso triggerfish, yellow tang, parrot fish and Moorish idol. The white spotted puffer is another common species that is easily recognized, especially if it feels threatened and puffs up.

Sea birds including the Bulwer’s petrel and wedge-tailed shearwater can usually be seen feeding on the surface. Amazingly, the shearwater is also capable of reaching depths of more than 200 feet to feed.

More wildlife and a lunch break awaits you at nearby Turtle Town, an area just off Maluaka Beach that supports an enormous population of Hawaiian green sea turtles. Known locally as “honu,” these slow-moving, graceful creatures are spectacular to watch, especially as they feed on algae close to the shore.

Check out Maui’s massive Haleakala volcano from bottom to top, as you journey from sea level to the summit to view spectacular island scenery and the immense crater of volcanic rock. You can catch a glimpse of Haleakala, Maui’s massive dormant volcano, from almost any point on the island, but you will go all the way to the top on this scenic journey – from sea level to 10,000 feet. At the summit is a vast crater seven and a half miles long by two and a half miles wide, and 3,000 feet deep. It last erupted in 1790 and has slumbered ever since, though that does not mean it won’t one day wake up. The Hawaiians revere it as a sacred site, and tell tales of Pele, Goddess of Fire and Volcanos.

The views from the top are magnificent. If the day is clear, you may even make out two other towering peaks – Mauna Loa and Mauna Kea on the Big Island. From the crater’s rim, you'll be able to appreciate first hand the unique beauty of this imposing caldera with its interesting mix of volcanic rock and plant life, some of which, like the silversword plant, is found only in Hawaii's volcanic craters.
