Your vessel will be a dufuna, inspired by a dugout canoe like those used by the indigenous Miskito people, a boat that will add a certain authenticity to the experience of traveling through the natural canal system. Besides providing critical habitat for wildlife, mangroves stabilize coastlines, purify water and store enormous amounts of carbon. Chances are, you will spot a variety of birds in the shelter of the mangroves. Their exposed intertwined roots form a protective cage of sorts above the water, providing an ideal breeding area for fish, shrimp and mollusks. So it is only fitting that your lunch will be a seafood boil. Afterwards, you will browse a straw market and learn how coconuts and cacao beans are processed into products such as coconut water and chocolates, samples of which you will be offered.
