Chocolate Experience at Bois Cotlette

Enjoy an enlightening and interactive immersion into the processing of cocoa beans on Dominica’s oldest estate and then create your own chocolate candies in the kitchen.
After departing from the pier, you will enjoy a brief drive south to Bois Cotlette, the island’s oldest estate. Dating to the early 1720s, it boasts the finest example of colonial architecture on Dominica and features the island’s only windmill and several buildings for the processing of crops such as coffee, sugar and cocoa.
While enjoying a welcome drink and orientation of the estate, you will learn what was discovered here during an archaeological excavation. Then the focus turns to the processing of cocoa beans.
Several pods will be picked from a tree and you will see firsthand how the beans inside are fermented, dried, roasted and ground for products such as cocoa powders, cocoa butter and chocolate. To enhance your appreciation of the versatile cocoa bean, tastings will be offered during each step.
Then you will create your own chocolate candies in the estate’s kitchen. You might infuse them with caramel, top them with sea salt or add flavors such as bacon and pepper. While sampling your concoctions, you might refer to a chocolate flavor wheel to help you express the characteristics of your signature candies.
As an accompaniment, you will be treated to some of the estate’s dark chocolate candies, fresh juices and rum punch. Then, feel free to explore the grounds, especially the Planter’s Herb Garden, before returning to the pier.

Note: This tour includes approximately 2 hours of easy to moderate walking/standing. There will be some uneven surfaces to negotiate. Due to accessibility issues, the tour is not available to wheelchair guests. Those with mobility concerns are cautioned to carefully evaluate their personal level of stamina and ability. Weather appropriate clothing; sun cap; sunglasses; sunscreen; and flat, comfortable walking shoes are recommended.
