This unforgettable excursion will have you traveling along the coastlines on the Sir Francis Drakes Highway heading through small villages such as Capoons Bay, Apple Bay, Carrot Bay, and then you will ascend about 900 feet above sea level between the Atlantic Ocean and the Caribbean Sea. Enjoy stunning views and the different shades of beautiful water. Your knowledgeable driver/guide will keep you constant company as the history and culture of the island is related via the public address system. At Long Bay beach, enjoy a relaxing swim in the crystal- clear water or just relax to the singing of the waves along the seashore.

Stroll through the atmospheric streets of the Old Quarter on the way to a nightclub, where you will watch a mesmerizing flamenco performance that tells a passionate story. After walking from the pier, you will continue at a leisurely pace toward the narrow, cobbled streets of the Old Quarter, which the Phoenicians founded in the 12th century. Being the oldest continuously occupied city in Western Europe, Cadiz exudes history, as you will soon discover in the Plaza of San Juan de Dios, a square that originated in medieval times.
As you meander the labyrinthine streets of the Old Quarter, you will pass one architectural treasure after another. Highlights may include the Neoclassical-style Cadiz Cathedral, which boasts a tile dome that appears Moorish, and Calle Ancha, a wide boulevard that is considered the heart of the city. In time, you will arrive at Taberna Flamenco La Cava, a nightclub that showcases the art of flamenco. Before taking your seat, be sure to notice the photos on the wall of some of the most acclaimed flamenco performers in the past 50 years. UNESCO honored flamenco by recognizing it on its list of Intangible Cultural Heritage of Humanity.
Andalusia, especially Cadiz, is the heartland of flamenco, an electrifying art form that fuses expressive songs, passionate dancing and emotional music. To enhance your immersion into the local culture, you will be served traditional tapas that may include Serrano ham and Manchego cheese.

Spend a full day meandering through a natural reserve, enjoying lunch at an organic farm and exploring an estate that creates essential oils from eucalyptus trees and medicinal plants. Your appreciation of all things natural will begin with a stroll along the marshland boardwalk at Massaciuccoli Nature Park, where you will likely see a huge variety of water birds. Lunch follows at Tenuta Mariani, a Tuscan farm with vast olive groves and vineyards. Besides running entirely on renewable energy and recycling most everything possible, the estate takes a biodynamic, chemical-free approach to farming that adds vitality to the soil and plants. It is a difference you will taste in every bite. The company Versil Green also respects the Tuscan environment when creating organic products for the food, cosmetics, and pharmaceutical industries. While touring, you will observe the production process and perhaps participate in an essential oils workshop. Afterwards, you will sample a craft beer made with organic hops.

Spend an enlightening day at a farm in Tuscany that produces a multitude of organic foods, many of which will be used as ingredients in your lunch. As an introduction to the artisanal practices at the Diacceroni farm, you will see how honey is produced and sample several varieties of the natural sweetener, which may include an amber chestnut honey and a floral-flavored acacia honey. Similarly, you will discover how the farmers use traditional methods to grow and harvest the crops. In preparation for the afternoon cooking class, you will gather a selection of fresh vegetables and herbs from the farm’s fields and gardens. You will then use those ingredients to concoct your delicious four-course lunch under the chef’s watchful eye. The dishes will be thoughtfully paired with organic wines. Afterwards, you’ll spend some time with a wine expert and agronomist who will talk with you about environmental ethics and biodiversity.

See how pineapples are sustainably grown on São Miguel Island and how cosmetics are made in ways that don’t harm the environment. Because of climatic conditions in the Azores, pineapples can’t grow outdoors, so to meet the demand farmers grow them in greenhouses. While visiting an eco-friendly pineapple farm, you will learn about the innovative methods used to coax fruit from the tropical plants. Azorean pineapples are intensely flavorful and exotically aromatic. The islanders also sustainably and ethically produce cosmetics using natural ingredients rather than chemicals. The ingredients are locally sourced and may include natural extracts, aloe vera and oils derived from plants. While participating in a hands-on workshop in a cosmetics laboratory, you will learn how to produce items such as soaps, face masks and shower gels without negatively impacting the environment. At the end of the workshop, you will receive your creation as a memento.

Follow a local guide on an enlightening walk through Lisbon’s most atmospheric districts, pausing at various venues to sample Portuguese delicacies. In the Baixa district, you will stop at Manteigaris Silva, a delicatessen that dates to the 19th century. Chances are, you will sample local ham and cheeses such as Serra da Estrela. You will then head to Mouraria, a Moorish-influenced district that is considered the birthplace of the music genre fado. There you will be served a sweet, cherry liqueur known as ginja. A tram ride with the locals will bring you to the historical Graça district, where you will become even more familiar with daily life in Lisbon. While pausing for photos at the more than 100-year-old Villa Bertha, you will enjoy superb views of the city and the Tagus River. Across from the basilica, you will find the 19th-century Estrela Gardens, an urban oasis with a duck pond, manmade caves and a wrought-iron bandstand. After a traditional cup of espresso-like coffee known locally as “bica,” you will ride the bus to the Principe Real neighborhood. After sampling a selection of more well-known products such as cheese, salami and olives, you will walk toward the Piazza del Duomo in the heart of the city. The famed Basilica of Santa Maria del Fiore overlooks the square, and its dome has become a symbol of the city. Then, after stopping for a cup of creamy gelato, you will enjoy free time to explore the Oltrarno district.

The city sits atop a Roman fishing town that a tsunami destroyed in the 5th century, and parts of it have been excavated. Fishing is still essential to Setubal, as you will discover at a bustling downtown market. Sardines, cuttlefish, oysters—they are all here on display, fresh from the docks where the fishermen have brought their morning’s catch. The guide will point out some of the most unusual species and introduce you to the vendors. While walking along a nearby promenade, you will likely see fishermen tending their nets. This will present another opportunity to interact with the locals and ask about their traditional livelihood, which new technology continues to influence. For a taste of the seafood that comes into Setubal, you will dine at a restaurant in town. The menu will include the local specialty “choco frito,” which is fried cuttlefish.

Discover Murcia, the capital of the province and Cartagena - a crossroad of cultures with a fascinating history dating back 3,000 years. An approximate 1-hour journey through the foothills of the Sierra Carrascoy takes you to Murcia. Settled by the Moors in the 9th century and conquered by the Christians in the 13th century, this bustling city offers an array of architectural delights. Stop at the Monastery of the Virgin of Fuensanta and enjoy a panoramic view of the orchards, one of the most productive in the Mediterranean.
Stop at Cathedral Square, where you’ll see the beautiful Baroque style facade of the cathedral, next to the Episcopal Palace. Visit the Royal Casino of Murcia dating back from 1847, it is one of the most historic buildings. Although this is still an active private club, the ground floor is open to the public. After a period of decline in the second half of the 20th century, the building was completely refurbished and many of the rooms were restored to their original splendor. You'll also pass through the Squares of Santo Domingo and Romeo and enjoy free time for lunch on your own before returning to Cartagena for an orientation tour of the city.
In Cartagena, you’ll visit the Castle of Conception outside visit, built over the remains of the Moorish Alcazar. From this vantage point, enjoy superb views of the city and harbor. Due to the natural protection of the mountains surrounding it, it was chosen as one of the three main naval bases in Spain during the 18th century. The remarkable remains of the Roman Theatre were only discovered back in the late 1980’s, it is believed to have accommodated up to 6,000 spectators.
