How to NOT use Specialty Dining Package?

I have a 2 night dining package that I want to use on Nights 6 & 7 of my cruise. However there are other specialty restaurants that I want to eat at before those nights. How do I book and eat at a specialty restaurant on Night 2 & 3 without having those applied as my 2 meals covered by the package?

You simply tell them when you check in for dining that night that you DO NOT want to use your specialty dining package for that meal. Then you pay out of pocket / a la carte.

What do people wear while on a ship in October? Is it climate controlled? Do people dress up for dinner?

The Bliss does cruise Alaska most of October. Yes it's getting quite cold then but the inside areas of the ship are comfortable. Out on deck you are going to want to wear a sturdy jacket, hat and gloves. NCL Freestyle Cruising means no "mandatory" dressing up but you do see people wearing a level above "smart casual" at times. The Alaska itineraries tend to be a little more casual however.

Was on the Dawn this past April-May and we asked our room steward and he brought us one and refilled with supplies for it everyday.

can we schedule excursions through a third party provider or do all excursions have to be scheduled through the cruise line?

I will join in here and say yes you can use third parties, but the "ship will wait for you" guarantee if you book through NCL is valuable. I've cruised NCL several times and twice have been on NCL excursions that were late. Once due to a truck on fire on the freeway outside of Rome during our return to ship, necessitating a three hour detour. We would have definitely missed the ship if they hadn't held it. Bonus that NCL credited us the full cost of the excursion for the inconvenience. The other time was due to an issue with equipment that was fault of the tour operator but NCL again held the ship.

Just looking to see if we HAVE to wear formal clothes for the main dining room like some ships require.

Are robes included with a balcony room?

To use when going to the hot tub in a bathing suit.

No, they aren't. Possibly with a suite or Haven cabin, but not with a regular balcony cabin. Pool side towels look different than cabin towels, suppose you could use one of those. Especially if they aren't tracking pool towels with your room number. Meaning if a pool towel gets left in your cabin, it would find it's way back poolside after laundry.
