During this in-depth walking tour of the historic district, you will see blocks of original 18th-century buildings while learning about the early government in Williamsburg, the colonial way of life and key figures that led the American Revolution. Of Williamsburg’s more than 500 period buildings, the stately Governor’s Palace may be the most important architecturally. It was built in 1722 to house Virginia’s royal governor and instill respect for executive power among the colonists. Another gem is the Capitol building, a replica of the original that burned in a fire. During free time, you might explore other areas more deeply, especially the exhibition buildings.     Become familiar with the agricultural practices of Ecofinca Nogales, an organic farm that grows fruits and vegetables using sustainable methods that respect the environment. While touring the family-operated farm, you will see firsthand how the produce is grown without chemicals that may damage the quality of the soil. Compost tea, livestock manure and plant debris are used as an organic fertilizer that over time improve the fertility of the land. The farm has also optimized its irrigation system to reduce water consumption and meticulously recorded its carbon footprint to see how it might be lessened. As a result, everything grown at Ecofinca Nogales is certified to be ecologically responsible and sustainable. The variety and distinct flavors of the produce may surprise you. During the tasting that follows the guided tour, you may sample Pinkerton avocados, Red Lady papayas and aubergines.

    Discover the traditional ways being practiced in the fishing village Pedregalejo, where you will see how an old-style fishing boat is made and learn how to grill sardines on an open fire. The origin of the wooden boats, known as jábegas, dates to the Phoenician era. They have recently experienced a rebirth of sorts with rowing clubs using them in competitive events. Pedregalejo is also revered for its old-style beachfront restaurants known as chiringuitos. At one of the most popular chiringuitos, you will learn how to prepare espeto, which is barbecued fish, most often sardines. The fish are heavily seasoned with coarse sea salt and skewered on long flat bamboo sticks. They are then placed over an open fire of olive wood, which imparts an unmistakable flavor. If sardines are used, their silvery color will turn golden brown as they cook. Once the sardines are done, you can eat them with your fingers right off the skewer.

    Explore the lifestyles in the two vastly different sides of Nicosia by crossing the demilitarized zone that separates the Greek side from the Turkish side. Your immersion into local life will begin in Laiki Geitonia, a traditional Greek Cypriot neighborhood in the south. Many of the sandstone buildings date to the 18th century and have been beautifully restored. Then, after stopping for coffee and a sweet known as bougaza, you will walk to the Green Line, the long United Nations Buffer Zone that has divided the entire island since 1974. On the Turkish side of the line, you explore Buyuk Han, a Ottoman-designed 16th-century caravansary that has been restored for merchants to sell their wares once again. This snapshot of local life, along with watching whirling dervishes, will show you that some aspects of Nicosia have changed little. To further understand the divisions within Nicosia, you will converse with two local journalists—one a Greek Cypriot, the other a Turkish Cypriot.

The elegant residence is decorated with period furnishings that lend it an ambiance so authentic that it feels as if you were transported to another time. While there, you will learn to make tapas, some traditional and others topped with surprisingly inventive ingredients. These small-plate snacks reflect the local cuisine and are typically served with a glass of sherry, especially in Jerez, which has been producing the fortified wine for more than 175 years. The exact tapas that you will prepare will depend on which ingredients are freshest and most flavorful. They might include fried fish, meatballs or something a bit more unusual such as stewed ox tail. Be sure to add favorite ingredients, as you will dine on the tapas afterwards.

    Begin with a short transfer to the cable car station for the scenic ride to the top of the Rock; it's only a short ride, but the panorama opening out before you is sufficiently breathtaking to make you forget you are suspended in mid-air. Enjoy scenic views of Catalan Bay, before striding along a wooded path to St. Michael's Cave to admire what was a source of wonderment even in Roman times. Neolithic inhabitants are known to have lived here much earlier.


    From here, you will proceed towards the home of Gibraltar's most respected residents, the "Barbary Apes", where you will have an opportunity to photograph these playful macaques. Continue on to Princess Caroline's Battery and the entrance to the Upper Galleries. This labyrinth of tunnels inside the Rock includes the Great Siege Tunnels. They represent arguably the most impressive defensive system devised by man. Excavated during the Great Siege of 1779-83, they allowed the mounting of gun emplacements along the north face of the rock towards enemy positions.


    Your tour concludes with a transfer back to the pier, passing the Tower of Homage of the Moorish Castle, the duty-free shopping area and Main Street. A stop will be made for those guests who wish to remain in town for shopping or independent exploration.

A ferry will take you to the Waterland, where you will begin pedaling at a leisurely pace well suited to the area’s laid-back ambiance. You can expect to see farmers going about their daily lives, brightly painted wooden houses and an impossibly green countryside crisscrossed with canals and dotted with seemingly endless rivers and lakes. Almost half of the Waterland is water, held in check by a series of dikes, and the landscape couldn’t be more beautiful.     Snorkel the azure waters adjacent to the of Belize's Barrier Reef, the world’s largest living barrier reef. This is a shallow water entry, well suited for beginners and intermediate snorkelers. Depart from the Harvest Caye Marina on one of our comfortable snorkel vessels for the short scenic ride to a beautiful site along the reef. This location is teeming with multitudes of colorful reef fish, co-habiting among the beautiful hard and soft coral formations, intermingled with sponges, sea fans, and delicate sea anemones.


    Possible sightings of spotted eagle rays and schools of larger fish are quite common, large starfish, queen conchs, and sea cucumbers also call this patch of the reef home. After snorkeling, re-board your boat and enjoy the return trip while listening to Caribbean rhythmic vibes. After returning to the pier, as you step off the boat, you can pick up your complimentary rum punch.

    Drive into the gorgeous countryside and meet the owners of a winery and a restaurateur who will demonstrate how to make traditional products. You will first visit the 12th-century monastery Agios Neophytos and observe the founding monk’s cave that he hand-carved. The interior is covered with extraordinary Byzantine frescoes. This remote area is also ideal for winemaking because the stony, free-draining soil forces the grape roots to grow deep and absorb character from the earth. To further understand the terroir, you will visit the winery Tsangarides in nearby Lemona. After touring the vineyards and observing the production process, you will sample a selection of wines. Continuing on to the village of Kallepia, you will visit Kika’s Garden Homemade Food and Produce. The proprietor Kika will demonstrate how to make a rustic Cyprus bread and traditional marmalades from lemons, oranges and even blueberries. Besides sampling these goodies, you will be served an organic brunch made with fresh, locally sourced ingredients.
