Experience the Damajagua waterfalls in every way imaginable with a local guide leading the adventure. A hike through a jungle-like landscape will bring you to the waterfalls, whose source is the Damajagua River, a cool mountain stream. This breathtaking natural wonder contains numerous cascades of varying heights. You will jump off some of the waterfalls, negotiate other ones by sliding down slick rock chutes and swim in the sparkling pools at the base of all of them. Wooden walkways and steps connect many of the cascades, allowing you access that would be impossible otherwise. The river is known for its beautiful blue hue as it spills out of the mountains and carves its way through the rocky terrain. Learn to make traditional paella at a farm in nearby L’Horta, an agricultural region on the outskirts of Valencia where most of the ingredients grow or can be found. Valencians often spend weekends in L’Horta to relax and enjoy a dinner of paella. The gathering is a ritual of sorts, in which families come together to socialize and dine on a dish that was first prepared in this area in the 15th or 16th century. The owner of the farm will show you around the grounds and point out some of the many garden items that will end up in your paella. You will then join a hands-on workshop and learn the basics of preparing this once-humble dish from scratch. While the dish is simmering in a large circular pan, you will toast the upcoming meal with a glass of sangria. When the paella is finished, you might taste it straight from the pan, another Valencian tradition.

After departing from the pier, you will soon arrive at a small village near the mouth of the Monkey River, where you will begin a leisurely cruise upstream. Along the way, the guide will provide enlightening commentary about the region's history, including how the economy boomed in the late 19th century when large volumes of bananas were exported.

Little evidence of that thriving time period remains, as the meandering Monkey River is bordered by undeveloped rainforest. Natural beauty and remarkably diverse flora and fauna are now the main attractions.

You can expect to see a variety of wildlife, including crocodiles sunning on the riverbanks, turtles popping their heads above the water's surface, and iguanas perched in the tree limbs. You might even spot a troop of black howler monkeys screeching in the forest.

Tropical birds are just as abundant along the river, especially wading birds such as herons, brightly colored tanagers and keel-billed toucans, the national bird of Belize. Toucans are easy to spot because of their large, colorful bills and how they croak like frogs.

Once you disembark, you will hike through the surrounding forest while the naturalist guide points out plants with medicinal qualities. For instance, leaves of the soursop are often brewed into a tea that reduces fever, and the wild yam has anti-inflammatory properties.

Enjoy a behind-the-scenes look at a citrus farm that grows fruit much like it did in the 19th century when the farm was established. Family-owned Huerto San Eusebio grows a variety of organic fruit, including famed Valencia oranges, grapefruits, kumquats, and lemons. While touring the farm with the owner, you will also likely see rarer fruits such as a multi-fingered citron known as Buddha’s hand and citrus caviar, a stout finger-shaped lime native to Australia. Most of the products are sold locally to maintain freshness and to minimize the environmental impact of transporting them over long distances. No chemicals or herbicides are used, and monoculture farming is avoided because it can deplete the soil’s natural nutrients and endanger the crops. You will learn some of the more fascinating specifics during a tasting of fruits and citrus jams. In contrast to this traditional experience, you will pause for photos at the modernistic City of Arts and Sciences, Valencia’s cultural hub.

Your tour begins in George Town - this prosperous capital ranks as the fifth-largest financial center in the world - with a guided drive along Seven Mile Beach, briefly stopping along the way to capture once-in-a-lifetime snapshots. Continue on to quaint local neighborhoods on your way to the Gingerbread House, followed by a stop at Hell, a small tourist village known for its unusual inferno rock formations.

After a 'hell' of an experience, you'll visit the Turtle Farm, home of the world-famous green sea turtle. On the way back to the pier, you’ll make a brief stop at one of Cayman's rum cake outlets.

Enjoy the view of riding on an open-air double decker bus. Drive from Philipsburg, the Dutch capital of St. Maarten, past the Great Salt Pond and through the countryside on the way to Marigot, the French-side capital. Here, you’ll have a photo-stop with a truly European atmosphere, having the waterside, open-air markets, quaint shops, boutiques or sidewalk cafes as your backdrop.

Back on board the Double Decker, you will pass through St. Maarten’s latest infrastructure addition, the Causeway Swing Bridge, where you can spot lovely sailboats or magnificent Mega Yachts on the lagoon, depending on the time of year.

Arriving at Maho you may watch for airplanes overhead as they are landing at the Princess Juliana International airport. The journey will proceed across the south for views of Simpson Bay Lagoon where we'll stop at a local Rum Distillery for a free tasting of various flavors of rum. Your experience concludes with a tasting at the Amsterdam Cheese and Liquor store for a tasting of Old Amsterdam Gouda Cheese.
