Your host will be a farmer that tends payoya goats and Grazalemeña sheep, whose milk is used to produce the cheeses. The most well-known and award-winning cheese is El Bosqueño, a smooth textured, light-colored cheese. The farmer will lead you through the fields where the goats and sheep graze and walk you through the cheese-making process step by step. Visit several of Old Town’s most iconic sites, which gained even greater fame after serving as locations for the fictional capital King’s Landing in “Game of Thrones.”

After departing from the pier, you will soon arrive in the oldest section of Dubrovnik, a revered UNESCO World Heritage Site. Fans of the TV series “Game of Thrones,” which is based on George R. R. Martin’s “A Song of Ice and Fire” fantasy novels, will recognize this part of Dubrovnik as King’s Landing, the fictional capital of the Seven Kingdoms.

Your first stop will be imposing Lovrijenac Fortress, located just outside the medieval walls that encircle Old Town. Known as Dubrovnik’s Gibraltar, the 11th-century fortress perches atop a craggy rock overlooking the sea, which represented Blackwater Bay in the books.

Continuing on, you will enter Old Town and make your way to the defensive walls to the south. After climbing the steps, you will walk along the stone battlements, which afford extraordinary views of the sea and the inner city. These walls appeared in numerous scenes in “Game of Thrones”; they were particularly prominent in the Battle of Blackwater Bay.

Later, you will enjoy free time within Old Town, where you may explore other sites that you may recognize from the series. For instance, the Jesuit Staircase was where Cersei Lannister began her Walk of Shame in Season Five, and many of the show’s market scenes were filmed along St. Dominic Street. Following free time, you will return to the pier.

Enjoy an insider’s look at life in Edam by visiting a local family and touring a cheese-making facility to see how Edam’s famed cheese is produced. An enlightening walking tour will introduce you to the city. Here, you will see from the outside, St. Nicholas Church and the Edam Museum; which occupies an 18th-century sea captain’s house. For a deeper understanding of life in Edam, you will stop by a centuries-old residence and enjoy coffee and cake with the owners. They will elaborate on the long history of their home, how Edam has changed just in their lifetimes and what the future may hold. Still, it is impossible to escape the draw of cheese in Edam. More than a quarter of the cheese produced in the Netherlands is the city’s namesake cheese, a soft variety made with less milk fat than most other cheeses. While touring a cheese-making facility in town, you will watch the process and then taste samples.

Take a scenic drive through the countryside to the magnificent city of Florence. Pause in the Piazza del Duomo to admire the exterior of the Cathedral (Duomo) of Santa Maria del Fiore, its elaborate Gothic façade is covered in a mix of pink and green marble.

View the statues in the Piazza della Signoria on your way to the Ponte Vecchio, the medieval stone bridge was the first bridge built across the River Arno, and has been well known for its goldsmiths and jewelers since the 16th century. Lunch is included at a local restaurant, and after the meal you’ll have free time to explore on your own or to shop, before your tour continues to the historic town of Pisa. Here, you’ll make a brief photo stop in Miracle Square for a look at the exterior of that famous Leaning Tower. Built in the 12th century, it began to lean soon afterwards, but has now been stabilized.

Bruges is an exquisitely preserved Medieval town. The general prosperity, visible in the opulence of the mansions and civic buildings, lasted until the end of the 15th century.

After a 30-minute drive from the port, you arrive in Bruges where your guided walk will start. Often called Die Scone or 'the beautiful', the charm of this lovely Medieval city will capture you immediately. Smaller and more contained than many other old Flemish cities, Bruges gives the impression that you have stepped back in time. Your guide will walk with you through the narrow, twisting cobbled streets, passing by picturesque scenes of ancient buildings, tree-lined canals and gabled facades. See the bustling marketplace, Belfry Tower, the Town Hall and the Chapel of the Holy Blood. The highlight of this walking tour will undoubtedly be a 30-minute canal tour. While sitting back in a small boat, you'll enjoy this short canal boat ride along the serene waterways of this romantic historical city. Admire the natural beauty surrounding the Bay of Fundy by visiting a coastal park full of hiking trails, lookouts and historical buildings from the years when this area was logged.

After departing from the pier, you will settle in for a relaxing drive to St. Martins, a lovely coastal village settled in 1783. It is known for its twin covered bridges, which you will view from a vantage point that allows you to capture both bridges in one spectacular shot. Continuing on, you will travel the winding Fundy Trail Parkway, passing forest lookouts, more beautiful beaches and the spectacular Bay of Fundy that rims the park.

At the Big Salmon Interpretive Centre, you will watch an enlightening video about the park’s history and the modest lodge that newspaper magnate William Randolph Hearst built nearby. You will then have free time to enjoy the attractions that interest you most. You might meander the hiking paths, cross the suspension footbridge that spans the crystal-clear Salmon River, and explore the replica sawmill.

Be sure to see Flower Pot Rock, a tall thin rock tower that the pounding sea has shaped over time. The bay’s rising tides have also created sea caves in the red sandstone, which you will see on the return to St. Martins. While totally submerged during high tide, the caves are easy to reach at low tide and make for a memorable photo any time. Following lunch at a restaurant that overlooks the caves, you will return to Saint John.

Birds in particular are the attraction at Volunteer Point, a nature preserve that supports the largest concentration of King penguins in the islands. Volunteer Point is also home to a multitude of Gentoo penguins, Magellanic penguins and dozens of other avian species. As you walk along the beach, you will observe these birds interacting in their native habitat. At up to three feet tall, king penguins look regal even waddling about. Their size and bright orange coloring on their heads and beaks make them easy to distinguish from the other penguins.
