Take in the lush vegetation of the coastline and the small villages of Anse la Raye and Canaries. Continue to Soufriere Bay where you’ll see the Petit and Gros Pitons rising majestically 2,600 feet out of the sea.     After ascending Morne Fortune, with its dramatic views, you’ll embark on a scenic drive along the winding west coast road to Soufriere, home of the Pitons, a UNESCO World Heritage Site. Here, you’ll visit the historical Diamond Estate with its Botanical Gardens, waterfall and mineral baths. Enjoy a guided tour of the gardens, an oasis of flowers, fruit trees and foliage along concrete walkways and a well-maintained gravel path over relatively even ground with a few steps leading to the mineral baths and the spectacular sight of Diamond Falls.


    Although one cannot bathe under the waterfalls, the amazing colors of the mineral stained rock face make an excellent photograph. You will have the option of a therapeutic bath in mineral pools fed by hot springs and built in 1784 for the troops of King Louis XVI of France. A refreshing drink is served at a hill top restaurant, which affords panoramic views of the town of Soufriere, the Pitons and the Caribbean Sea. Local snacks are available for purchase. On your way back to Castries, you will stop for photos at the quaint fishing village of Anse la Raye.

    Talk to the culinary artisans that make some of the island’s signature products and sample their delicious creations. On the way out of Castries, you will first pause at the lookout on Morne Fortune, a hill that offers the ultimate panoramic view at the capital city and the sea beyond. The views are also spectacular at Horizon Cocktails, an inland bar and grill atop a hill in Anse la Verdure that is blanketed with tropical vegetation. It is a paradisical setting for an unlimited sampling of rums produced on St. Lucia, some with sugarcane juice, others with molasses. Similarly, at the family-run bakery Plas Kassav, you will taste specialty pastries and breads whose main ingredient is cassava. As you will discover, this root vegetable is a staple grown throughout the island. For dessert, you will sample small-batch chocolates from Cacao Sainte Lucie, whose master chocolatiers will explain how they make these organic sweets.

On the drive out of Castries, you will pass landmarks such as a historical Roman Catholic church and Derek Walcott Square, which was named for the St. Lucian-born poet and playwright that won the Nobel Prize. Upon reaching the Pink Plantation, a rosy-hued French-designed residence on the outskirts of town, you will first browse the tropical garden and gallery. The works are by local artists that include owner and ceramicist Michelle Elliot, who will also prepare your lunch. You will dine on the plantation’s open-air veranda, a setting that will be as inspirational as the dishes. The starter will likely include callaloo, a spicy soup that originated in West Africa. One of the options for the main course will be the catch of the day, grilled to perfection in a garlic white wine sauce.

Continue through the town of Soufriere where the magnificent Pitons are not to be missed. Drive to Toraille Waterfall and take a cool dip in this cascading 50 foot waterfall. Take a short drive to Morne Coubaril Estate, a 17th century plantation. Upon arrival take a guided tour and then enjoy a Creole buffet lunch in a rustic restaurant. Continue to the Soufriere docks and board your catamaran for a cruise along the rugged west coast. Spend time swimming in one of the bays. Cruise through Marigot Bay before returning to your ship.

    Take a journey that encompasses the production of rum and the historical and cultural heritage of the island. Drive through the town of Castries up to Morne Fortune for a spectacular view of Castries Harbor and the northern landscape. Continue on to Eudovic’s Art Studio for a carving demonstration and the chance to purchase a locally carved wooden sculpture. Take a scenic drive to the Marigot Bay viewpoint, Marigot Bay is considered to be one of the most beautiful bays in the Caribbean - home to resorts, villas and yachts. Continue on to the rum distillery to see how rum is made and learn what gives each, its own distinct flavor. From molasses vats holding the dark thick aromatic raw material to the pot and columns stills, you’ll engage all of your senses and understand the art of making rum.
