A unique culinary experience that combines a little history, a little food and a local refreshment - making for a perfect day!

You may have previously enjoyed the wonderful flavors of West Indian cooking, but do you know the actual ingredients of the dishes or their history? Regardless of whether you are a seasoned cook or just a lover of tasty cuisine, this demonstration will appeal to you.

After a short drive you’ll arrive at Fairview Great House & Botanical Garden. Tantalize your taste buds as you enjoy regional dishes prepared before your eyes. As ingredients are added, the historian cook will recount tales about the history of regional foods, share old and new recipes, talk about the wonderful development of dishes that use old and new world foods with African, European and Indian cooking methods.

During the demonstration the chef will enlighten you about the dishes being prepared and then you’ll be given an opportunity to ask questions. Some might even have the opportunity of assisting the chef in cooking the meal, after which everyone will enjoy what’s been prepared along with a homemade refreshment.

Later, you may browse locally made handcrafts available for sale or explore the Great House. The main floor of the Great House is furnished in authentic colonial style. On display here is the dining room, with the table set for a delicious West Indian dinner; the living room; a gentleman’s study; and a historical information room where you can learn more about previous owners of the property, life on the island in colonial times and the process undertaken to fully restore this historic gem. Upstairs you will find the master bedroom with a large veranda that offers a panoramic view of the Caribbean Sea, the South-East Peninsula and St. Kitts’ sister island of Nevis. You may also choose to enjoy wandering through the different areas of the beautifully landscaped 2.5 acre botanical garden at your leisure.

Before leaving, be sure to take home with you complimentary copies of the recipes of the dishes that were prepared during your tour.

Transfer from the dock by mini bus through the picturesque countryside, before arriving at the ATV base. After an orientation session and an introduction to the bikes, it’s time to take a ride! See the wild side of St. Kitts as you maneuver your ATV along dirt tracks and over mountain crossings. Discover historical ruins, picturesque sugar plantations, rainforest trails and other breathtaking scenery. This fun ride takes you off the beaten track through nature trails into Wingfield Estate which was once owned by the grandfather of U.S. President Thomas Jefferson.

Along the route you’ll see a variety of trees and foliage that have existed for generations, while you travel through sugar cane and tractor paths. See estate ruins that tell of the islands’ rich heritage and history. View the Caribbean Sea as well as historic Brimstone Hill Fortress. After being served local fruits and liquid refreshments, your tour continues with an open safari scenic drive to the beach for a swim in the tranquil Caribbean Sea. Wear comfortable shoes. Bring swimwear, towel and sunscreen.

A uniquely pleasurable way to see some of the most beautiful areas of the island is to do so on horseback and this guided eco-tour provides the perfect opportunity to experience the nature and beauty of St. Kitt’s countryside.

Your tour begins with an open safari drive through the western side of Basseterre. Upon arrival at the stables and after an orientation and safety briefing, you’ll mount your horse and begin your adventure. Heading off with your guide, you’ll make your way along a trail that takes you through the island’s lush countryside. On clear days, you’ll be treated with views of neighboring islands. Enjoy the gentle breeze of the trade winds with the warm sun embracing you from atop your horse. The breath taking views create a perfect backdrop for those vacation photos so don’t forget your camera.

Along the route be enthralled by the vast species of trees and foliage that have existed for generations, as you travel through sugar cane and tractor paths. See the breathtaking view of the Caribbean Sea as well as the historic Brimstone Hill Fortress, the Gibraltar of the West Indies. You'll return to the ATV base where local fruits and refeshments will be served.

Board your catamaran and sail along the scenic coastline of St. Kitts with mountains and beaches on one side and the open sea on the other. Your first stop is a protected cliff-side cove. After receiving your snorkel gear and a safety briefing, enjoy the tropical fish and beautiful coral formations on your snorkel adventure. The trip continues across the "narrows," a two-mile channel which separates St. Kitts from the sister island of Nevis. Upon arrival at Nevis, the Captain anchors off Pinney's Beach, a three-mile stretch of sand with the towering Mount Nevis rising majestically into the clouds. Your attentive crew serves complimentary soft drinks throughout the tour and an open bar after snorkeling. Enjoy a lunch served onboard, then swim and relax. After lunch, your crew sets a course for the leisurely sail back to St. Kitts.

You’ll be transferred to the dolphin facility and upon arrival, attend an informative presentation by the dolphins certified trainers that will prepare you for your fun encounter and guide you through the experience.

Now it’s time to meet the dolphins! Everyone is outfitted with a life vest and stands on a submerged platform in waist-deep water. A happy, playful dolphin will swim over to you as your Dolphin Encounter begins. Touch the dolphin’s soft, smooth skin and watch as it rolls over for a belly rub. Get ready for the thrilling finale – a gentle dolphin kiss!

You’ll be transferred to the dolphin facility and upon arrival, attend an informative presentation by the dolphins certified trainers that will prepare you for your dolphin experience.

Now it’s time to meet your dolphin pal! Enter the water outfitted with a life vest and be introduced to a happy, playful dolphin. Touch the dolphin’s soft, smooth skin and listen as it sings. Your new pal will offer you a handshake, then pucker up for a gentle dolphin kiss! Head into deeper water and climb aboard a boogie board and let the dolphin push you through the water. Then, gently grab the dolphin’s pectoral fins for a cruising belly ride—it’s a ride you’ll never forget.

A panoramic drive will bring you to Romney Manor, an estate that Thomas Jefferson’s great, great, great grandfather purchased in 1625. Only five families have owned it since. After meandering about the gardens and the ruins of the former sugar plantation, be sure to browse the estate’s store Caribelle Batik, whose artists produce fine one-of-a-kind batik fashions using ancient Indonesian methods. Brimstone Fortress presents a different side of St. Kitts. Known as the Gibraltar of the West Indies, this UNESCO World Heritage site is a tribute to 18th-century British military engineering and presents spectacular views of the neighboring islands. Even so, the most memorable view will surely be from atop the Timothy Hill Overlook, as you will see the Atlantic Ocean on one side and the Caribbean Sea on the other.
